Sunchokes – Jerusalem Artichokes

Sunchokes are a type of native sunflower. It’s the underground knobby tuber that is eaten. Prized by diabetics and chefs. Use it pretty much any way you’d fix potatoes, except mashed. It reminds most folks of water chestnut – crispy and juicy – you can eat it raw or sliced into salads. Available in October-December, and again in the early spring, March-April. Sold by the pound.
